One of our new favorite items at Rock Paper Scissors and Bed & Butter are these yummy jams from Bonnie's Jams. They are also one of Oprah's favorite things! Bonnie's Jams are all natural and capture the flavor of perfectly ripe fruit.
We love putting Bonnie's Jams on toast, serving them with cheese, and baking with them. We choose two favorite jams - Black & Blue and Strawberry Rhubarb - and decided to bake them into a sweet treat for our staff members to enjoy.
These bars are easy to make and so tasty! Come pick up some Bonnie's Jams from us and make them today!
Oatmeal Crumb BarsIngredients:
1 Jar of Bonnie's Jams
3/4 cup butter, melted
3/4 cup light brown sugar
1 cup flour
1 cup rolled oats
1 teaspoon baking soda
pinch of sea salt
Directions:
Combine the melted butter, brown sugar, flour, oats, baking soda, and salt in a bowl. Mix well. Pat half of the mixture into an 8" x 8" pan.
Bake for 10 minutes at 350 degrees.
Remove from the oven and spread an even layer of jam, almost all the way to the edges.
Crumble the rest of the oatmeal mixture over the jam layer and return the pan to the oven.
Bake for 15-20 more minutes until the top layer looks lightly browned.
Remove the pan from the oven, allow to cool, then cut the crumb bars into small squares and serve.
*Quick note - we added a few dashes of cinnamon to the strawberry rhubarb version of these bars to emulate a strawberry rhubarb pie.
